Sounds like it could be leaky lower intake gaskets. This has been an on-going problem (very common on the 3.1 & 3.4's). When the lower intake gaskets get old, the seals around coolant ports begins to seep a bit. And when the engine cools, the oil near these ports gets sucked into the coolant as it cools.Change the upper intake manifold, not just its gasket. The LIM gaskets that are most often recommended are the ACDelco metal gaskets. 89017816 is an ACDelco part number for yours but IDK if these are the plastic or the metal ones. Not sure which UIM is best. I used a Dorman UIM and FelPro gaskets on my car and was pleased.
